PRODUCTION
The production of Nebbiolo wine requires particular attention and care. Nebbiolo grapes are harvested manually during the optimal ripening period and then subjected to a long maceration to extract the desired tannins and aromas. Subsequently, the wine is aged in wooden barrels for a period varying from one to five years, depending on the type of Nebbiolo produced. All our vineyards are grown naturally and worked by hand, with the utmost respect for the Earth and with total care and attention for each vine.
COMBINATIONS
The ideal pairing for Nebbiolo wine are meat-based dishes, such as braised meats, roasts and mature cheeses. Its acidity and tannicity blend perfectly with the texture and intense flavors of these foods.
